Brief Introduction

El Renacer is located in Chinchiná, in the region of Caldas in Colombia. The farm has planted varieties like Bourbon, Pink Bourbon, SL28, and Typica. Aims to express their profiles with a touch of microbiology given by the natural fruits we can encounter in the farm and in the region. 

πŸ₯ Kiwi Co-Ferment πŸ₯

A type of wash process begins with the creation of a fermentation culture that will be used. Mother culture is created containing microorganisms like Lactobacillus and Saccharomyces cerevisiae. 80 litres of this culture is separated and fed dehydrated kiwis and sweeteners like panela or molasses. The dehydrated fruits (kiwis) contribute flavour to the culture, which the sweetener energises the fermentation and brings the culture's sugar content to a higher level.

Coffee cherries are then floated to remove impurities, pulped, and deposited into a sealed tank. The previously fermented culture is added to the tank, and the coffee is fermented for 150 hours. It is then moved to the drying area, dried in direct sunlight for 2 - 3 days, then another 12- 13 days under shaded canopies until it reaches 10 -11% humidity.

    Raw coffee: Airtight not required. Shelf life up to 24 months

    DO NOT REFRIGERATE OR FREEZE - ODORS AND MOISTURE CAN DAMAGE FLAVOR.
