🏔️Brief Introduction:

John Rodriguez has been growing coffee his entire life in Finca Rio Negro. He started to learn about specialty coffee by attending workshops, speaking with other growers, and experimenting on his farm. To enhance flavor complexity, he introduced new varieties like Catuai and Pink Bourbon and explored fermentation techniques, including lactic fermentations and fruit must. Through trial and error, he refined his methods, creating innovative coffees that reflect his dedication to adaptation and quality.

🌿The process:

❖ Cherries are exclusively picked at their optimal point of ripeness. Undergo floatation to eliminate over-ripe and defective cherries.

❖ Oxidized for 24 hours to enhance sensory characteristics. 

❖ Once the oxidation stage is complete, they are then meticulously pulped.

❖ Followed by 24 hours of anaerobic fermentation, the natural sugar of coffee transformed into complex flavors and aromas.

❖ Finally, the coffee is dried over 20 days to guarantee the full development and preservation of flavor profiles.

    Keep away from humidity and sunlight. Store in a cool (15 – 20 °C), dark, and dry place.

    Raw coffee: Airtight not required. Shelf life up to 24 months
    Roasted coffee: Airtight recommended. Shelf life 3 – 6 months

    DO NOT REFRIGERATE OR FREEZE - ODORS AND MOISTURE CAN DAMAGE FLAVOR.
